Ingredients

  • 200g wheat noodles
  • 1 cup cabbage, shredded
  • 1 carrot, julienned
  • 1/2 cup mushrooms, sliced
  • 100g chicken or tofu
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 green chili, slit
  • 4 cups vegetable or chicken broth
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp oil

Instructions

  1. Heat oil, saut' onions, garlic, ginger, green chili.
  2. Add chicken (if using), cook until lightly browned.
  3. Add vegetables, saut' 2-3 mins.
  4. Pour in broth, bring to boil.
  5. Add noodles, cook 5-8 mins until soft.
  6. Season with salt and pepper.
  7. Serve hot, garnish with coriander.
