- 200g noodles (wheat or rice)
- 1 cup cabbage, shredded
- 1 carrot, julienned
- 1 small tomato, chopped
- 1/2 cup bell peppers, sliced
- 100g chicken (optional)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 1 green chili, slit
- 2 tsp soy sauce
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp oil
- 4 cups water or chicken/vegetable broth
Instructions
- Heat oil in a pot, saut' onions, garlic, ginger, and green chili until aromatic.
- Add chicken pieces (if using), cook until lightly browned.
- Add chopped vegetables (cabbage, carrot, bell peppers, tomato) and stir 2-3 mins.
- Pour in water or broth, bring to boil.
- Add noodles, cook until soft (5-8 mins).
- Season with salt, pepper, soy sauce.
- Simmer 2-3 mins and serve hot.
- Garnish with fresh coriander or spring onions.
