  • 1 cup gram flour (besan)
  • 1/2 cup yogurt
  • 1 tsp fruit salt (eno)
  • 1 tsp ginger-green chili paste
  • 1/2 tsp turmeric
  • Salt to taste
  • Water as needed
  • 1 tbsp oil
  • Mustard seeds
  • Curry leaves
  • Green chilies

Instructions

  1. Mix besan, yogurt, water, salt, turmeric, and ginger-chili paste into smooth batter.
  2. Allow batter to rest 10–15 mins.
  3. Add fruit salt, mix gently, and pour into greased tray.
  4. Steam for 15–20 mins until cooked.
  5. Prepare tempering with oil, mustard seeds, curry leaves, and chilies.
  6. Pour tempering over steamed dhokla and cut into pieces.

Do not overmix after adding fruit salt | Steam on medium heat for soft texture | Allow dhokla to cool slightly before cutting
