  • 2 cups wheat flour
  • 1 cup sattu (roasted gram flour)
  • 1 small onion, finely chopped
  • 1-2 green chilies, chopped
  • 1 tsp carom seeds (ajwain)
  • 1 tsp mustard oil
  • Salt to taste
  • 1 medium eggplant
  • 1 medium potato
  • 2 medium tomatoes
  • 1-2 garlic cloves, minced
  • 1 tbsp mustard oil
  • Fresh coriander for garnish
  • Water as needed

Instructions

  1. Prepare dough: mix wheat flour, water, and salt to make soft dough.
  2. Prepare stuffing: mix sattu, chopped onion, green chilies, ajwain, mustard oil, and salt.
  3. Stuff dough balls with sattu mixture and seal well.
  4. Roast or bake the litti until golden brown; brush with ghee.
  5. Prepare chokha: roast eggplant, potato, and tomatoes until soft.
  6. Mash roasted vegetables with garlic, mustard oil, green chilies, salt, and coriander.
  7. Serve hot with litti, ghee, and chutneys.
