- 1 cup sattu (roasted gram flour)
- 1 small onion, finely chopped
- 1-2 green chilies, chopped
- 1 tsp carom seeds (ajwain)
- 1 tsp mustard oil
- Salt to taste
- 1 medium eggplant
- 1 medium potato
- 2 medium tomatoes
- 1-2 garlic cloves, minced
- 1 tbsp mustard oil
- Fresh coriander for garnish
- Water as needed
Instructions
- Prepare dough: mix wheat flour, water, and salt to make soft dough.
- Prepare stuffing: mix sattu, chopped onion, green chilies, ajwain, mustard oil, and salt.
- Stuff dough balls with sattu mixture and seal well.
- Roast or bake the litti until golden brown; brush with ghee.
- Prepare chokha: roast eggplant, potato, and tomatoes until soft.
- Mash roasted vegetables with garlic, mustard oil, green chilies, salt, and coriander.
- Serve hot with litti, ghee, and chutneys.
